What was recognised was not a view but a working method: some 5.5 million trees across 27,000 farms, planted in a narrow band between 200 and 600 metres, held up by three distinct kinds of terracing — dry-stone walls, earth banks, and the crescent-shaped dry-stone lunette built around individual trees.</p><p class="section-body" style="margin-bottom:18px">The candidacy was led by Trevi with Assisi, Spello, Foligno, Campello sul Clitunno and Spoleto. Olives have been here a very long time: stones have been found in Etruscan graves of the seventh century BC. The harvest is still done by combing the branches by hand.</p></div><div style="margin-bottom:56px"><h3 class="font-cinzel" style="font-size:22px;line-height:1.3;color:var(--gold);margin-bottom:20px;font-weight:400">Umbria DOP, and why the Spoleto zone is the strict one</h3><p class="section-body" style="margin-bottom:18px">Umbria was the first Italian region to win a region-wide protected designation for its olive oil, registered in November 1997. The DOP is divided into five sub-zones, and the one covering this area is Colli Assisi-Spoleto — not Colli Martani, which is the adjacent zone on the Montefalco side, and which most writing confuses with it.</p><p class="section-body" style="margin-bottom:18px">Colli Assisi-Spoleto has the tightest specification of the five. Moraiolo must be at least 60 per cent of the blend, with Leccino and Frantoio up to 30. Yield is capped at 5,000 kg of olives per hectare and 21 per cent oil, and the oil must carry at least 150 parts per million of polyphenols — the compounds behind the peppery catch at the back of the throat, and a third more than the other Umbrian zones are required to reach. Harvest must be finished by 15 January, though in practice the new oil is pressed between mid-October and November.</p><p class="section-body" style="margin-bottom:18px">The Strada dell&#x27;Olio DOP Umbria, an association formed in 2004, runs five itineraries through the sub-zones, linking mills to villages and Romanesque churches. Certified DOP volumes are small and falling — 462 tonnes in 2018, 431 in 2022 — which tells you this is not an industry so much as a surviving practice.</p></div><div style="margin-bottom:56px"><h3 class="font-cinzel" style="font-size:22px;line-height:1.3;color:var(--gold);margin-bottom:20px;font-weight:400">How to tell if your truffle is the one you paid for</h3><p class="section-body" style="margin-bottom:18px">The truffle of Norcia is Tuber melanosporum, the tartufo nero pregiato. In Umbria its season runs from 1 December to 15 March — the regional calendar is stricter than the national one, which allows from 15 November. If someone offers you fresh black truffle in July, it is not this species.</p><p class="section-body" style="margin-bottom:18px">It will be the scorzone, Tuber aestivum, whose Umbrian season runs from late May to the end of August. From the outside the two look similar: both black, both warty. The test is to cut it. Melanosporum has a dark, purplish-black interior threaded with fine white veins. The scorzone, despite its black skin, is pale hazelnut inside. That single distinction is the most useful thing anyone can tell you before you order.</p><p class="section-body" style="margin-bottom:18px">Norcia&#x27;s market show, Nero Norcia, is a national event rather than a village fair, held over the last two weekends of February — inside the real season. Production, though, is falling. Professor Mattia Be
27ncivenga, writing for the 2025 edition, attributes the long decline principally to atmospheric pollution and fine particulates settling into the soil, arguing that climate change alone does not account for it. French output fell from around a thousand tonnes a century ago to roughly ten by 2000.</p></div><div style="margin-bottom:56px"><h3 class="font-cinzel" style="font-size:22px;line-height:1.3;color:var(--gold);margin-bottom:20px;font-weight:400">Norcino meant surgeon before it meant butcher</h3><p class="section-body" style="margin-bottom:18px">The Italian word for a pork butcher is norcino, after the town. But Treccani gives the older sense first: one who castrates pigs, slaughters them, and works and sells the meat — and records that between the fifteenth and eighteenth centuries the norcini, along with the preciani from nearby Preci, were renowned as surgeons, specialists in lithotomy and cataract operations.</p><p class="section-body" style="margin-bottom:18px">The anatomical skill came from the slaughtering. When the Fourth Lateran Council of 1215 barred the clergy from surgery, the knowledge passed from the monks of Sant&#x27;Eutizio to lay families, who carried it as far as the courts of France and Spain. Norcineria, meanwhile, was originally a Roman word — the name Rome gave to the shops run by butchers who had emigrated from Norcia.</p><p class="section-body" style="margin-bottom:18px">Prosciutto di Norcia is IGP, not DOP, and may only be cured in Norcia, Preci, Cascia, Monteleone di Spoleto and Poggiodomo — all above 500 metres, because the altitude does the work. Two dry-salting phases, then a minimum of twelve months. The earthquakes of 2016 hit the town hard: the basilica of San Benedetto lost its bell tower on 30 October and reopened only at the end of October 2025, nine years later. The town hall came back in April 2026, the theatre in May. The centre is still a building site, and worth visiting anyway.</p></div><div style="margin-bottom:56px"><h3 class="font-cinzel" style="font-size:22px;line-height:1.3;color:var(--gold);margin-bottom:20px;font-weight:400">The lentil that paints the plain</h3><p class="section-body" style="margin-bottom:18px">Lenticchia di Castelluccio di Norcia has been IGP since 1997. It grows on the Pian Grande, Pian Piccolo and Pian Perduto — fifteen square kilometres at about 1,350 metres, the floor of a drained Apennine lake with no surface outflow, draining instead through a swallow hole. Note that Pian Perduto is in the Marche, so the IGP crosses the regional border; calling the lentil simply Umbrian is a small error a fact-checker will catch.</p><p class="section-body" style="margin-bottom:18px">It is sown between mid-March and mid-May, once the snow has gone, and must be harvested by August before the first frosts. The seed is tiny — around 23 grams per thousand — with a skin thin enough that it needs no soaking. Yield is capped at 800 kilos a hectare, which is why it costs what it costs.</p><p class="section-body" style="margin-bottom:18px">The Fiorita, the flowering that draws photographers from across Europe, is usually described as a wildflower meadow. It is not. It is an agricultural side-effect: the lentil is sown late and left un-weeded, so poppies, cornflowers, mustards and the lentil&#x27;s own white flower come up together. Farm the plain more intensively and the spectacle disappears with the crop. It runs roughly from late June to mid-July, weather depending, and during peak weekends the road across the Pian Grande is closed to parking, with shuttle buses from Forca di Presta and Monte Prata.</p></div><div style="margin-bottom:56px"><h3 class="font-cinzel" style="font-size:22px;line-height:1.3;color:var(--gold);margin-bottom:20px;font-weight:400">Sagrantino, and a wine Spoleto has quietly kept for itself</h3><p class="section-body" style="margin-bottom:18px">Montefalco Sagrantino has been DOCG since 1992, made from one grape and nothing else, across Montefalco and parts of Bevagna, Gualdo Cattaneo, Castel Ritaldi and Giano dell&#x27;Umbria. It must age at least thirty-seven months, twelve of them in wood.</p><p class="section-body" style="margin-bottom:18px">Research presented by Fulvio Mattivi of the Fondazione Edmund Mach found that Sagrantino skins accumulate more tannin than any other grape variety studied, above even Tannat, with wines reaching four grams per litre of total polyphenols — a level he noted would be intolerable in most wines. The structure of the tannin, rather than the quantity, is what keeps it drinkable. The passito is the older style: grapes dried on racks for at least two months, then fermented to a sweet red that is still ferociously tannic. The dry version is the modern invention.</p><p class="section-body" style="margin-bottom:18px">Spoleto has its own denomination too, and it is white. Spoleto DOC was recognised in 2011, built on Trebbiano Spoletino, at least 85 per cent. Its rules were revised at the end of 2025: skin maceration is now formally permitted, the 400-metre alt
27itude cap has gone, and a Riserva has been added. Umbria has only two DOCGs — this Sagrantino and Torgiano Rosso Riserva — so the region&#x27;s most interesting bottles are often not the ones with the highest classification.</p></div><div style="margin-bottom:56px"><h3 class="font-cinzel" style="font-size:22px;line-height:1.3;color:var(--gold);margin-bottom:20px;font-weight:400">Strangozzi: nobody knows where the name comes from</h3><p class="section-body" style="margin-bottom:18px">Strangozzi are flour and water, no egg — the traditional form uses soft-wheat flour with remilled durum semolina, rolled thick and cut by hand into strips about a centimetre wide with a square cross-section. They are on Umbria&#x27;s register of traditional agri-food products. Some commercial producers make an egg version; it is not the old one.</p><p class="section-body" style="margin-bottom:18px">Two folk etymologies circulate. One derives the name from stringa, a bootlace, which is what the strips look like. The other tells of anti-clerical rioters under the Papal States strangling priests with their laces, fusing stringa with gozzo, throat. Neither is documented — the regional tourist board itself reports them with &#x27;it is said&#x27; — and the cousin word strozzapreti, priest-chokers, carries its own family of legends. The honest position is that the name is not settled.</p><p class="section-body" style="margin-bottom:18px">The Spoleto dressing, strangozzi alla spoletina, is not a ragù: ripe peeled tomatoes, good oil, garlic, parsley and chilli, cooked fast. The other canonical version is alla nursina, with black truffle grated into warm oil with garlic and anchovy. Beyond the pasta, look for farro from Monteleone di Spoleto, which is DOP and was found in a sixth-century BC Etruscan tomb there; the black celery of Trevi, grown unblanched so it stays dark, harvested in October; and roveja, a wild pea recovered from near-extinction and ground into a polenta dressed with anchovy and garlic.</p></div></article></div><style>
